Mushroom with Bow Tie Pasta

Ingredients

Scale: 1x
  • ½ pound Farfelle pasta
  • 1 tablespoon Butter
  • 1 tablespoon Olive oil
  • ½ cup Onion (minced)
  • 1 teaspoon Garlic powder
  • 1 pound Mushroom (fresh)
  • 1 teaspoon Thyme (dried)
  • ¾ cup Chicken stock
  • ¼ cup Heavy cream
  • 2 teaspoon Lemon juice
  • ½ cup Parmesan (fresh, grated)
  • 1 tablespoon Parsley

Instructions

  1. Meanwhile, heat butter and olive oil over medium heat until foaming. Add onions and cook about 4 minutes. Add garlic. Increases heat to med. high and add mushrooms. Cook for about 10 minutes, until browned. Stir in thyme and add some salt. Remove to bowl.
  2. Add chicken stock to skillet and bring to boil making sure to scrape up the brown bits from bottom of skillet. Remove from heat and stir in cream, lemon juice and pepper. Add salt to taste.
  3. Add muchrooms, liquid, cheese and parsley to pasta. Cook over med. low heat until liquid is absorbed, about 2-3 minutes.
  4. Makes 4-6 side servings.

Tips

Make sure all dairy ingredients are well-chilled for best results.
