Mushroom with Bow Tie Pasta

A creamy mushroom pasta dish with Parmesan cheese and fresh herbs
Ingredients

- 0.5 pound Farfalle pasta (bow tie pasta)
- 1 tablespoon Butter
- 1 tablespoon Olive oil
- 0.5 cup Onion , minced
- 1 teaspoon Garlic powder
- 1 pound Mushrooms , fresh
- 1 teaspoon Thyme (dried)
- 0.75 cup Chicken stock
- 0.25 cup Heavy cream
- 2 teaspoons Lemon juice
- 0.5 cup Parmesan , fresh, grated
- Black pepper (to taste)
- 1 tablespoon Parsley
Instructions
- Cook pasta according to package directions. Drain and return to pasta pot
- Meanwhile, heat butter and olive oil in a large skillet over medium heat until foaming
- Add onions and cook about 4 minutes until softened
- Add garlic powder and stir
- Increase heat to medium-high and add mushrooms
- Cook mushrooms for about 10 minutes, until browned
- Stir in thyme and add salt to taste, then remove mushroom mixture to a bowl
- Add chicken stock to the same skillet and bring to a boil, making sure to scrape up the brown bits from bottom of skillet
- Remove from heat and stir in cream, lemon juice, and pepper. Add salt to taste
- Add mushrooms, liquid, cheese, and parsley to the pasta in the pot
- Cook over medium-low heat until liquid is absorbed, about 2-3 minutes
Tips
For a vegetarian version, substitute vegetable stock for the chicken stock. You can also try different mushroom varieties for more complex flavors.
