Ahi with Thai Dipping Sauce

Seared ahi tuna steaks with a flavorful white peppercorn and sesame seed crust, served with a tangy Thai-inspired dipping sauce.

- 4 6-ounce Ahi tuna steaks
- 1 tablespoon white peppercorns, cracked
- 1 tablespoon sesame seeds
- 1 teaspoon kosher (coarse) salt
- 1/3 cup lime juice
- 3 tablespoons dark soy sauce
- 1 tablespoon fish sauce
- 2 teaspoons sugar
- 1 teaspoon jalapeno peppers, diced
- Oil for coating the fish
Instructions
- For the rub: In a small saucepan combine the peppercorns, salt and sesame seeds.
- Roast this mixture until the seeds are lightly toasted, about 5 minutes.
- For the sauce: Whisk together lime juice, soy sauce, fish sauce, sugar, and diced jalapeno.
- Lightly oil both sides of the Ahi and sprinkle on the rub. Press lightly into flesh.
- Grill over high, direct heat. Sear each side about 1-2 minutes.
- Serve with individual portions of the sauce.
Tips
For the best presentation and flavor, the tuna should be seared on the outside but still raw in the center. Adjust cooking time based on your preference for doneness.
