Wheat-Free Apple Walnut Bread

A delicious gluten-free quick bread made with almond flour, walnuts, and applesauce
Ingredients

- 2 cups almond flour
- 1 cup chopped walnuts
- 2 tablespoons flaxseed flour
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup unsweetened applesauce (can be omitted)
- 1/2 cup melted coconut oil
- 1/4 cup sour cream
Instructions
- Preheat oven to 325°F
- Coat a 9 x 5 loaf pan with cooking spray or oil
- In a large bowl, combine dry ingredients (almond flour, walnuts, flaxseed flour, cinnamon, baking powder, salt)
- In another bowl, combine wet ingredients (eggs, applesauce, coconut oil, sour cream)
- Mix wet and dry ingredients together. If the batter is too stiff, add 1-2 tablespoons of water
- Pour batter into prepared loaf pan
- Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean
- Let cool for about 20 minutes before slicing
Tips
This bread freezes well. Slice before freezing for easy single servings.
