A delicious gluten-free quick bread made with almond flour, walnuts, and applesauce

Ingredients

Scale: 1x
  • 2 cups almond flour
  • 1 cup chopped walnuts
  • 2 tablespoons flaxseed flour
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup unsweetened applesauce (can be omitted)
  • 1/2 cup melted coconut oil
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 325°F
  2. Coat a 9 x 5 loaf pan with cooking spray or oil
  3. In a large bowl, combine dry ingredients (almond flour, walnuts, flaxseed flour, cinnamon, baking powder, salt)
  4. In another bowl, combine wet ingredients (eggs, applesauce, coconut oil, sour cream)
  5. Mix wet and dry ingredients together. If the batter is too stiff, add 1-2 tablespoons of water
  6. Pour batter into prepared loaf pan
  7. Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean
  8. Let cool for about 20 minutes before slicing

Tips

This bread freezes well. Slice before freezing for easy single servings.
