Armadillo Eggs

A classic appetizer featuring stuffed jalapenos wrapped in sausage and cheese.
Ingredients

- 10 whole Jalapeno peppers , largest available, halved lengthwise, seeded
- 0.5 package Cream cheese
- 0.5 cup Sharp cheddar cheese
- 0.5 cup Mozzarella cheese
- 0.125 teaspoon Salt
- 0.25 teaspoon Chili powder
- 0.5 pound Pork sausage, raw
- 0.5 cup Sharp cheddar cheese
- 1.5 cups Bisquick baking mix
- 2 whole Eggs , beaten
- 1 package Shake & Bake coating mix, Pork flavor
Instructions
- Use the largest Jalapenos you can find.
- Split the Jalapenos in half lengthwise and de-seed.
- Mix together the STUFFING ingredients (Cream cheese, 1/2 cup Cheddar, Mozzarella, Salt, Chili powder) and pack the jalapeno halves. Put the halves back together to reform the pepper shape.
- Mix the BREADING ingredients: Bisquick, sausage and 1/2 pound Cheddar cheese.
- Take this sausage mixture and form it around a stuffed jalapeno. Use enough to cover completely.
- Beat the eggs in a shallow dish.
- Dip the sausage-covered jalapenos in the beaten egg and then roll in the Shake and Bake mix to coat.
- Cook at 350°F (175°C) for 25 minutes. You can also grill these, turning a couple times until the sausage is cooked through.
Tips
Ensure the sausage layer completely seals the jalapeno to prevent cheese leakage during cooking.
