Succulent jumbo shrimp wrapped in prosciutto, skewered with fresh pineapple chunks, and glazed with a sweet and savory Asian-inspired marinade.

Ingredients

  • 20 jumbo shrimp
  • 1 tablespoon olive oil
  • 6 tablespoons soy sauce
  • 1/4 cup fresh lemon or lime juice
  • 2 teaspoons fresh ginger
  • 4 cloves garlic
  • 1/4 cup honey
  • 2 teaspoons fresh ground pepper
  • 20 strips prosciutto
  • 20 chunks pineapple

Instructions

  1. Combine oil, soy sauce, juice, ginger, garlic, honey and pepper.
  2. Set aside half of the mixture for mopping. Marinate shrimp in other half for about 30 minutes.
  3. Wrap each shrimp with prosciutto.
  4. Skewer shrimp, then pineapple chunk.
  5. Grill over medium-high heat until prosciutto is crisp and shrimp is pink.
  6. Brush with reserved marinade throughout the grilling process.

Tips

For best results, use metal skewers or soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. The sweet and salty combination of prosciutto and pineapple perfectly complements the shrimp.
