Atomic Buffalo Turds (ABT's)

Spicy jalapenos stuffed with a creamy, cheesy, smoky filling, wrapped in bacon and dusted with BBQ rub.

- 18 whole Jalapeno peppers
- 4 ounces Cream cheese , room temperature
- 0.25 cup Mild cheddar cheese, shredded
- 0.5 cup Smoked meat (beef or pork)
- 0.25 tablespoon Garlic powder
- 0.25 tablespoon Onion powder
- 0.5 tablespoon Honey
- 0.5 pound Bacon , room temperature, cut in half (approx 18 pieces)
- Olive oil (for tossing peppers)
- BBQ Rub (to taste)
Instructions
- Preheat oven, grill, or smoker to 350°F (175°C).
- Allow bacon and cream cheese to come to room temperature for easier handling.
- In a bowl, mix the room temperature cream cheese, cheddar cheese, smoked meat, garlic powder, onion powder, and honey until well combined.
- Cut the tops off the jalapenos and carefully core out the seeds and membranes (wear gloves!).
- Lightly toss the cored jalapenos with olive oil.
- Sprinkle BBQ rub generously over the oiled jalapenos.
- Fill each jalapeno cavity with the cream cheese mixture.
- Cut each slice of bacon in half crosswise.
- Drape one half-slice of bacon over the top opening of each stuffed jalapeno.
- Sprinkle more BBQ rub over the bacon-wrapped jalapenos.
- Place the ABT's on a baking sheet (if using oven) or directly on the grill/smoker grates.
- Cook for approximately 40 minutes, or until the bacon is crispy and the jalapenos are tender.
Tips
Using pre-cooked smoked meat adds a deeper flavor dimension. Adjust the amount of seeds left in the jalapenos to control the heat level.
