Banana Coffee Cake

Ingredients

  • ¼ cup Cinnamon & sugar
  • 1 cup Sugar
  • ½ cup Shortening
  • 2 medium Banana (mashed)
  • 1 tablespoon Vanilla extract
  • ½ cup Sour cream
  • 2 cup Flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 6 tablespoon Butter
  • 6 tablespoon Milk
  • ¾ cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 2 cup Confectioner's sugar

Instructions

  1. Preheat oven to 350º. Prepare bundt or tube pan by spraying with oil.
  2. With a mixer, cream the sugar and shortening until light and fluffy. Beat in eggs, banana and vanilla. Add the sour cream and mix until blended.
  3. In a separate bowl, combine the flour, baking soda and powder and salt. Add to the batter and beat until blended.
  4. Pour in half of the batter. Sprinkle half of the cinnamon sugar over this.
  5. Add the other half of the batter and top with remaining cinnamon sugar.
  6. Bake for 45 minutes. Cool for 5 minutes and then turn out and ice.
  7. Melt the butter in a sauce pan. Add the sugar and milk, bring to boil and boil for 1 minute.
  8. Remove from heat and add vanilla.
  9. Gradually add the powdered sugar, stirring constantly with a whisk.
  10. Pour over Coffee Cake.
