Banana Coffee Cake

- ¼ cup Cinnamon & sugar
- 1 cup Sugar
- ½ cup Shortening
- 2 medium Banana (mashed)
- 1 tablespoon Vanilla extract
- ½ cup Sour cream
- 2 cup Flour
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 6 tablespoon Butter
- 6 tablespoon Milk
- ¾ cup Brown sugar
- 1 teaspoon Vanilla extract
- 2 cup Confectioner's sugar
Instructions
- Preheat oven to 350º. Prepare bundt or tube pan by spraying with oil.
- With a mixer, cream the sugar and shortening until light and fluffy. Beat in eggs, banana and vanilla. Add the sour cream and mix until blended.
- In a separate bowl, combine the flour, baking soda and powder and salt. Add to the batter and beat until blended.
- Pour in half of the batter. Sprinkle half of the cinnamon sugar over this.
- Add the other half of the batter and top with remaining cinnamon sugar.
- Bake for 45 minutes. Cool for 5 minutes and then turn out and ice.
- Melt the butter in a sauce pan. Add the sugar and milk, bring to boil and boil for 1 minute.
- Remove from heat and add vanilla.
- Gradually add the powdered sugar, stirring constantly with a whisk.
- Pour over Coffee Cake.
Tips
