Beef En Daube

- 2 pound Beef (cut into 1-in. cube)
- ½ cup Green olives
- ½ cup Orange juice
- ½ cup Pimientos
- 1 tablespoon Onion
- 1 cup Tomato juice
- 1 cup Red wine (dry)
- 4 tablespoon Olive oil
- 1 teaspoon Salt
- ½ teaspoon Pepper
- ½ teaspoon Oregano (dried)
Instructions
- Combine olives, OJ, pimentoes, garlic and onion. Puree in food processor until smooth.
- In your DO, heat the oil and when hot brown beef cubes.
- Cover the beef with the puree, add the tomato juice and wine. Mix in the salt, pepper and oregano.
- Cover DO and cook for a couple of hours at 300º. This can be done oven-like or simmered slowly over camp stove. Cook it until the meat is tender. You may have to add a cup or so of water.
