A classic French beef stew cooked with wine, tomato juice, and a flavorful olive-orange puree
Ingredients

- 2 pounds Beef , cut into 1-inch cubes
- 0.5 cup Green olives
- 0.5 cup Orange juice
- 0.5 cup Pimientos
- 2 Garlic cloves
- 1 tablespoon Onion
- 1 cup Tomato juice
- 1 cup Dry red wine
- 4 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Pepper
- 0.5 teaspoon Dried oregano
Instructions
- Combine olives, orange juice, pimientos, garlic and onion in a food processor. Puree until smooth
- In your Dutch oven, heat the olive oil over medium-high heat
- When the oil is hot, add the beef cubes and brown on all sides
- Cover the beef with the olive-orange puree
- Add the tomato juice and red wine
- Mix in the salt, pepper, and oregano
- Cover the Dutch oven and cook for about 2 hours at 300°F
- This can be done in the oven or simmered slowly over a camp stove
- Cook until the meat is tender, adding a cup or so of water if needed during cooking
Tips
This stew develops even better flavor if made a day ahead. Refrigerate overnight and reheat gently before serving. Serve with crusty bread to soak up the flavorful sauce.
