Belize Hot Sauce

Ingredients

- 1 small Onion (chopped)
- 2 clove Garlic (chopped)
- 1 tablespoon Oil
- 2 medium Carrot (chopped)
- 2 cup Water
- 3 tablespoon Lime juice (fresh)
- 3 tablespoon White vinegar
- 1 teaspoon Salt
Instructions
- Saute onions in oil until soft. Add garlic and cook for about 30 seconds.
- Add carrots and water, bring to boil and cook, uncovered, until carrots are soft.
- Remove from heat and add habs, lime juice, vinegar and salt.
- Puree in processor until smooth.
- Makes 2 pints.
