A copycat version of the famous tangy, peppery, mayonnaise-based white BBQ sauce from Big Bob Gibson Bar-B-Q in Decatur, Alabama. Excellent on chicken.

- 0.25 cup White vinegar ((Distilled or Cider))
- 2 tablespoons Apple cider ((or apple juice))
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper, coarsely ground
- 0.5 teaspoon Lemon juice, fresh
- 0.5 teaspoon Prepared horseradish ((not cream style))
- 0.125 teaspoon Cayenne pepper
Instructions
- In a medium bowl, combine all ingredients: mayonnaise, vinegar, apple cider, salt, black pepper, lemon juice, horseradish, and cayenne pepper.
- Whisk well until the sauce is smooth and thoroughly combined.
- Transfer the sauce to an airtight container (like a jar).
- Chill in the refrigerator for at least 1-2 hours (preferably longer) before serving to allow the flavors to meld.
- Shake or stir well before using.
- Serve as a dipping sauce, marinade, or basting sauce, especially for grilled or smoked chicken.
Tips
This sauce is known for its tangy kick and peppery bite. Adjust horseradish and cayenne to your preference. The flavor definitely improves after chilling.
