Big Piney Stew

A hearty beef stew with red potatoes, carrots, and green beans cooked in a Dutch oven
Ingredients

- 3 pounds beef steak, cubed
- 1/4 cup olive oil
- 22 ounces tomato juice
- 1 pound green beans, cut
- 1 pound carrots
- 6 red potatoes
- 1 red onion, chopped
- 2 teaspoons garlic powder
- 1 tablespoon salt
- 2 teaspoons pepper
- Water, enough to just cover ingredients
- 1/2 cup flour
Instructions
- Heat olive oil in a Dutch oven
- Add beef cubes and garlic powder, then brown the meat
- Add tomato juice and all the vegetables
- Add enough water to just cover the ingredients
- If using a Dutch oven with coals, use 15 coals on top and 9 on the bottom
- Cook for 1 to 1 1/2 hours, until meat and vegetables are tender
- In a cup, mix the flour with some juice from the pot to create a slurry
- Dissolve the flour completely in the liquid
- Add the flour mixture back to the pot and stir to thicken
- If you want a thicker stew, add more flour mixture
Tips
For an even richer flavor, try adding a cup of red wine or beef broth along with the tomato juice.
