A hearty beef stew with red potatoes, carrots, and green beans cooked in a Dutch oven

Ingredients

  • 3 pounds Beef steak , cubed
  • 0.25 cup Olive oil
  • 22 ounces Tomato juice
  • 1 pound Green beans , cut
  • 1 pound Carrots
  • 6 Red potatoes
  • 1 Red onions , chopped
  • 2 teaspoons Garlic powder
  • 1 tablespoon Salt
  • 2 teaspoons Pepper
  • Water (enough to cover ingredients)
  • 0.5 cup Flour

Instructions

  1. Heat olive oil in a Dutch oven
  2. Add beef cubes and garlic powder, then brown the meat
  3. Add tomato juice and all the vegetables
  4. Add enough water to just cover the ingredients
  5. If using a Dutch oven with coals, use 15 coals on top and 9 on the bottom
  6. Cook for 1 to 1 1/2 hours, until meat and vegetables are tender
  7. In a cup, mix the flour with some juice from the pot to create a slurry
  8. Dissolve the flour completely in the liquid
  9. Add the flour mixture back to the pot and stir to thicken
  10. If you want a thicker stew, add more flour mixture

Tips

For an even richer flavor, try adding a cup of red wine or beef broth along with the tomato juice.
