Blueberry Cream Muffins

- 2 cup Sugar (granulated)
- 1 cup Oil
- 1 teaspoon Vanilla
- 4 cup Flour (all-purpose, unbleached)
- 1 teaspoon Salt
- 1 teaspoon Baking soda
- 16 ounce Sour cream
Instructions
- Beat eggs and gradually add sugar. Continue mixing and add oil gradually. Stir in vanilla.
- Gently add blueberries.
- Fill muffin cups to about 3/4 full.
- Bake for 20 minutes.
- Makes about 30-36 muffins
