Blueberry Cream Muffins

Ingredients

  • 2 cup Sugar (granulated)
  • 1 cup Oil
  • 1 teaspoon Vanilla
  • 4 cup Flour (all-purpose, unbleached)
  • 1 teaspoon Salt
  • 1 teaspoon Baking soda
  • 16 ounce Sour cream

Instructions

  1. Beat eggs and gradually add sugar. Continue mixing and add oil gradually. Stir in vanilla.
  2. Gently add blueberries.
  3. Fill muffin cups to about 3/4 full.
  4. Bake for 20 minutes.
  5. Makes about 30-36 muffins
