  • 1/2 cup sugar
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 1/4 cup water
  • 1/4 cup light corn syrup
  • 2 teaspoons lemon juice
  • 2 cups blueberries (fresh or frozen)

Instructions

  1. In a microwave-safe 1-quart casserole dish, combine sugar and cornstarch, mixing well.
  2. Add water, corn syrup, and lemon juice, stirring until cornstarch is dissolved.
  3. Stir in blueberries until well coated with the mixture.
  4. Microwave on high for 4-6 minutes, stirring every 2 minutes, until the mixture thickens and blueberries burst.
  5. Allow to cool slightly before serving. The syrup will continue to thicken as it cools.
  6. Store leftover syrup in an airtight container in the refrigerator for up to 2 weeks.

Tips

For a smoother syrup, you can blend and strain after cooking. Fresh berries work best, but frozen blueberries can be substituted without thawing. The lemon juice brightens the flavor and helps preserve the syrup's color. This recipe can easily be adapted for other berries like strawberries, raspberries, or blackberries.
