BRITU Sauce

60 mins Serves 10

A sweet and tangy BBQ sauce with a tomato paste base, sweetened with corn syrup, brown sugar, molasses, and finished with honey.

Ingredients

Scale: 1x
  • 2 cups Water
  • 0.75 cup Light corn syrup
  • 0.5 cup Cider vinegar
  • 0.5 cup Tomato paste
  • 3 tablespoons Molasses
  • 3 tablespoons Brown sugar, packed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Onion powder
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Paprika
  • 0.125 teaspoon Garlic powder
  • 0.5 cup Honey

Instructions

  1. In a medium saucepan, combine all ingredients EXCEPT the honey (water, corn syrup, cider vinegar, tomato paste, molasses, brown sugar, salt, onion powder, pepper, paprika, garlic powder).
  2. Whisk together until well combined.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low and simmer, uncovered, for about 1 hour, or until the sauce has thickened to your desired consistency. Stir occasionally.
  5. Remove the saucepan from the heat and let the sauce cool considerably (ideally below 160°F / 70°C) before adding the honey. Adding honey to a very hot sauce can diminish its flavor.
  6. Once the sauce has cooled, stir in the honey until fully incorporated.
  7. Transfer the sauce to an airtight container.
  8. Refrigerate overnight (or for at least several hours) to allow the flavors to meld before serving.

Tips

Cooling the sauce before adding the honey helps preserve its delicate flavors. This sauce has multiple sweeteners, adjust brown sugar/molasses slightly if desired.
