A creamy, cheesy broccoli casserole with rice and vegetables

Ingredients

  • 2 packages frozen broccoli
  • 1 cup uncooked instant rice
  • 1 cup water
  • 1 can cream of mushroom soup
  • 1/2 pound Velveeta cheese
  • 1 stick butter
  • 1/2 cup diced celery
  • 1/2 cup diced onion

Instructions

  1. Preheat oven to 350°F
  2. Cut butter into slices and place in a large casserole dish
  3. Add all remaining ingredients to the casserole dish and mix well
  4. Bake for 1 hour, stirring a couple of times during cooking

Tips

For a crunchy topping, add crushed crackers or French fried onions during the last 15 minutes of baking.
