Brown Chicken Stock

Serves 8

Ingredients

Scale: 1x
  • 2 pound Chicken bones (raw)
  • 1 tablespoon Oil
  • 1 cup Onion
  • ½ cup Celery
  • ½ cup Carrot
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper (coarsely ground)
  • 1 tablespoon Peppercorns
  • 10 cup Water
  • 1 cup Red wine

Instructions

  1. Place everything in a stock pot making sure to scrape the baking sheet and add any crumbs to the pot.
  2. Bring to boil, reduce and simmer for 2 hours.
  3. Remove from heat, skim any fat that has risen and strain.
