Bubba’s Shrimp & Corn Stew with Brown Rice

- 1 small onion (chopped)
- 1 large tomato (diced)
- pinch of Thyme
- 1 teaspoon cornstarch
- ⅓ cup water
- 1 pound of peeled (raw shrimp)
Instructions
- Melt butter in a large saucepan and sautee onions, peppers, and tomatoes until transparent . Add the corn and thyme and saute’ for 5 minutes. Dissolve the cornstarch in the water and add to the pot. Cover and cook for 15 minutes on medium ow heat.
- Add the shrimp and cook for 15 minutes on medium -low heat. Remove the stew from the heat and let it stand for 30 minutes.
- Serve over 1/3 cup of brown rice. Garnish with parsley.
