Bubba’s Shrimp & Corn Stew with Brown Rice

Ingredients

Scale: 1x
  • 1 small onion (chopped)
  • 1 large tomato (diced)
  • pinch of Thyme
  • 1 teaspoon cornstarch
  • cup water
  • 1 pound of peeled (raw shrimp)

Instructions

  1. Melt butter in a large saucepan and sautee onions, peppers, and tomatoes until transparent .  Add the corn and thyme and saute’ for 5 minutes. Dissolve the cornstarch in the water and add to the pot.  Cover and cook for 15 minutes on medium ow heat.
  2. Add the shrimp and cook for 15 minutes on medium -low heat.  Remove the stew from the heat and let it stand for 30 minutes.
  3. Serve over 1/3 cup of brown rice.  Garnish with parsley.
