A classic homemade Caesar dressing with the perfect balance of garlic, Parmesan, and tangy flavors. Simple to make and much more flavorful than store-bought versions.
Ingredients

- 1/3 cup oil
- 1 clove garlic, crushed
- 2 tablespoons cider vinegar
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Dash of sugar
- Dash of Worcestershire sauce
- 1/2 cup fresh grated Parmesan
- Anchovies (optional)
Instructions
- Combine oil, crushed garlic, cider vinegar, lemon juice, salt, pepper, sugar, and Worcestershire sauce in a jar or container with a tight-fitting lid.
- Add the grated Parmesan cheese.
- Secure the lid and shake vigorously until all ingredients are well combined.
- If desired, add anchovies to the dressing or serve them on individual salads.
- Toss with approximately 1 1/2 bunches of romaine lettuce just before serving.
Tips
For the best flavor, use fresh Parmesan that you grate yourself rather than pre-grated cheese. You can substitute extra virgin olive oil for a more traditional flavor. The dressing can be made ahead and stored in the refrigerator for up to a week - just shake well before using. For a more authentic Caesar dressing, you can add a raw egg yolk, though this is optional and carries some food safety considerations.
