A delicious cheese blintzes featuring beat 6 eggs and mix together with flour, drain cottage cheese and mix together with eggs and coat an 8 inch skillet with non-stick spray. pour 1/4 cup batter and coat the pan. cook one side only until the edges begin to curl.

- Beat 6 eggs and mix together with flour, water and salt.
- Drain cottage cheese and mix together with eggs, sugar and salt
- Coat an 8 inch skillet with non-stick spray. Pour 1/4 cup batter and coat the pan. Cook one side only until the edges begin to curl, about 20-30 seconds. Place on wax paper and repeat until finished.
- Place 2-3 TBS of filling along one edge of crepe and roll up.
- Melt 1 TBS of butter in skillet and brown crepes, 8 at a time, for about 1-2 minutes per side.
