Cheese Blintzes

Ingredients

Scale: 1x
  • 2 cup Water
  • cup Flour
  • 1 teaspoon Salt
  • 2 pound Cottage cheese
  • cup Sugar
  • ½ teaspoon Salt
  • 3 tablespoon Butter (unsalted)

Instructions

  1. For the batter:
  2. Beat 6 eggs and mix together with flour, water and salt.
  3. For the filling:
  4. Drain cottage cheese and mix together with eggs, sugar and salt
  5. Coat an 8 inch skillet with non-stick spray. Pour 1/4 cup batter and coat the pan. Cook one side only until the edges begin to curl, about 20-30 seconds. Place on wax paper and repeat until finished.
  6. Place 2-3 TBS of filling along one edge of crepe and roll up.
  7. Melt 1 TBS of butter in skillet and brown crepes, 8 at a time, for about 1-2 minutes per side.
