Cheese Blintzes

Ingredients

- 2 cup Water
- 1½ cup Flour
- 1 teaspoon Salt
- 2 pound Cottage cheese
- 1½ cup Sugar
- ½ teaspoon Salt
- 3 tablespoon Butter (unsalted)
Instructions
- For the batter:
- Beat 6 eggs and mix together with flour, water and salt.
- For the filling:
- Drain cottage cheese and mix together with eggs, sugar and salt
- Coat an 8 inch skillet with non-stick spray. Pour 1/4 cup batter and coat the pan. Cook one side only until the edges begin to curl, about 20-30 seconds. Place on wax paper and repeat until finished.
- Place 2-3 TBS of filling along one edge of crepe and roll up.
- Melt 1 TBS of butter in skillet and brown crepes, 8 at a time, for about 1-2 minutes per side.
