Cheesy Chicken Roll-ups

- ¼ cup Flour
- 1 cup Mayonnaise
- ¼ cup Milk
- 2 tablespoon Green onion (minced)
- ½ teaspoon Ginger
- ½ cup Almond slivers
- 8 ounce Pineapple (crushed)
- ½ pound Velveeta cheese
Instructions
- Pound out chicken breasts to 1/4 inch thickness.
- Using a red and a green bell pepper, cut into 1/2 inch strips and place one of each in a breast and roll them up. Insert a toothpick to keep rolled and then dredge in flour.
- Place in baking dish and brush with 1/2 cup Mayo, milk, onions and ginger.
- Bake at 350º for about 30-40 minutes or until cooked thru.
- While baking, drain and reserve the juice from the pineapple.
- Combine 1/2 cup mayo, pineapple liquid and cheese and melt over low heat until smooth.
- Add pineapple and heat thru.
- Pour over chicken and serve.
Tips
Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
