Cheesy Chicken Roll-ups

Ingredients

  • ¼ cup Flour
  • 1 cup Mayonnaise
  • ¼ cup Milk
  • 2 tablespoon Green onion (minced)
  • ½ teaspoon Ginger
  • ½ cup Almond slivers
  • 8 ounce Pineapple (crushed)
  • ½ pound Velveeta cheese

Instructions

  1. Pound out chicken breasts to 1/4 inch thickness.
  2. Using a red and a green bell pepper, cut into 1/2 inch strips and place one of each in a breast and roll them up. Insert a toothpick to keep rolled and then dredge in flour.
  3. Place in baking dish and brush with 1/2 cup Mayo, milk, onions and ginger.
  4. Bake at 350º for about 30-40 minutes or until cooked thru.
  5. While baking, drain and reserve the juice from the pineapple.
  6. Combine 1/2 cup mayo, pineapple liquid and cheese and melt over low heat until smooth.
  7. Add pineapple and heat thru.
  8. Pour over chicken and serve.

Tips

Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
