Chicken and Dumplings

Ingredients

Scale: 1x
  • 4 pound Chicken piece
  • 8 cup Water
  • 3 can Chicken broth (14 oz.)
  • 1 medium Onion (sliced)
  • 2 clove Garlic (chopped)
  • 2 tablespoon Parsley
  • 1 teaspoon Thyme
  • 1 teaspoon Black pepper
  • 1 teaspoon White pepper
  • 1 tablespoon Lemon juice
  • 2 cup Carrot (sliced into coins)
  • 2 cup Peas (frozen)
  • 2 cup Flour
  • 1 tablespoon Baking powder
  • 1ΒΌ teaspoon Salt
  • 1 cup Milk
  • 3 tablespoon Bacon grease

Instructions

  1. Bring water and broth to boil, add chicken and onion, celery and garlic plus all the spices except the peppers and the lemon juice.
  2. Simmer for 2 hours, uncovered, then remove chicken and let cool and strain broth discarding solids.
  3. Return broth to pot and add the peas, carrots, peppers and the lemon juice and return to simmer.
  4. While simmering dumplings, clean chicken, discarding bones and skin. Chop into bite sized chunks and add to broth and heat for another 15 minutes or until desired consistency is reached.
