Chocolate Tweed Cake

Ingredients

- 2 cup Mashed potatoes
- ¾ cup Butter
- 2¼ cup Sugar
- 1¾ cup Flour
- 2 teaspoon Baking powder
- 1 teaspoon Salt
- ½ cup Milk
- 1½ teaspoon Cinnamon
- ½ teaspoon Cream of tartar
- ½ teaspoon Ground cloves
- ½ teaspoon Nutmeg
- 2 ounce Chocolate (unsweetened)
Instructions
- Beat together butter and sugar. Beat in potatoes(make sure they are cool) and eggs, one at a time.
- Mix flour, baking powder, salt, cream of tartar and all the spices.
- Add flour mixture and milk to potato mixture, alternating and blending after each.
- Grate chocolate and stir in.
- Grease AND flour baking pan.
- Bake for 50 minutes.
- Let cool and glaze(dissolve 3 TBS water in 2 cups powdered sugar)
Tips
Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
