Serves 4
A lean, flavorful Mexican-style chorizo seasoned with chili powder, garlic, and vinegar. Perfect for crumbling and cooking in tacos, enchiladas, and other Mexican dishes.
Ingredients
Scale:
1x
- 1 pound pork loin
- 2 tablespoons chili powder
- 2 tablespoons vinegar
- 2 cloves garlic, crushed
- 1 teaspoon kosher (coarse) salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cumin powder
Instructions
- Grind pork loin into a hamburger-like consistency using a meat grinder with a medium plate.
- In a large bowl, combine the ground pork with all the spices, crushed garlic, and vinegar.
- Mix thoroughly until all ingredients are well incorporated.
- Cover and place in the refrigerator overnight. This resting time is very important to allow the spices and vinegar to properly blend into the meat.
- When ready to use, cook by crumbling and pan-frying until fully cooked through.
- Use in various Mexican recipes such as tacos, enchiladas, tamales, etc.
Tips
Unlike most sausages that use fatty cuts, this chorizo specifically calls for lean pork loin. The vinegar acts as both a flavoring agent and a preservative. For an authentic touch, use Mexican oregano if available. The overnight rest is essential - don't skip this step as it develops the full flavor profile.
