- 1 pound lean ground pork
- 15 chiltepins, crushed (can substitute bird's eye chilis)
- 1 cup chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 3 tablespoons distilled vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground cloves
Instructions
- In a large bowl, combine all ingredients and mix thoroughly until well incorporated.
- Cover and refrigerate overnight to allow the flavors to meld and develop.
- Use as needed by crumbling and cooking in a skillet, or freeze in portions for later use.
- Cook thoroughly until the internal temperature reaches 160°F before consuming.
Tips
Chiltepins (also known as chile tepin) are very hot, small, round peppers native to Mexico. If you can't find them, substitute with other hot peppers like bird's eye chilis or cayenne. This recipe has an intense flavor profile - the large amount of chili powder is authentic but can be reduced if desired. Mexican oregano works best in this recipe if available.
