Cilantro Crusted Pork Loin

Ingredients

  • 1 pound Pork Loin
  • ½ cup Flour
  • ¼ cup Parmesan (fresh, grated)
  • ¼ cup Cilantro (chopped)
  • ¼ cup Bread crumbs (fine)
  • 1 tablespoon Vegetable oil
  • 3 tablespoon Butter
  • 3 tablespoon Cilantro (chopped)
  • 2 tablespoon Lemon juice
  • tablespoon Soy sauce (dark)

Instructions

  1. 1 Egg(s), beaten
  2. 1 1/2 tablespoon(s) Soy sauce, dark
  3. Cut loin into 1" thick slices.
  4. Place flour, egg, cilantro and bread crumbs in that order.
  5. Dredge loin slices in that order.
  6. Heat oil in pan and fry breaded pork pieces until golden brown......about 2 1/2 minutes per side.
  7. After cooking all the pork, melt butter in pan. Scrape up any remaining bits.
  8. Pour sauce over pork pieces.
