Cilantro Crusted Pork Loin

- 1 pound Pork Loin
- ½ cup Flour
- ¼ cup Parmesan (fresh, grated)
- ¼ cup Cilantro (chopped)
- ¼ cup Bread crumbs (fine)
- 1 tablespoon Vegetable oil
- 3 tablespoon Butter
- 3 tablespoon Cilantro (chopped)
- 2 tablespoon Lemon juice
- 1½ tablespoon Soy sauce (dark)
Instructions
- 1 Egg(s), beaten
- 1 1/2 tablespoon(s) Soy sauce, dark
- Cut loin into 1" thick slices.
- Place flour, egg, cilantro and bread crumbs in that order.
- Dredge loin slices in that order.
- Heat oil in pan and fry breaded pork pieces until golden brown......about 2 1/2 minutes per side.
- After cooking all the pork, melt butter in pan. Scrape up any remaining bits.
- Pour sauce over pork pieces.
