Ingredients

Scale: 1x
  • 1 head cabbage, shredded
  • 2 medium carrots, grated
  • 1 medium green pepper, diced
  • 2 tablespoons onion, grated
  • 2 cups mayonnaise
  • 3/4 cup granulated sugar
  • 1/4 cup Dijon mustard
  • 1/4 cup cider vinegar
  • 2 tablespoons celery seed
  • 1 teaspoon salt
  • 1/8 teaspoon white pepper

Instructions

  1. Shred cabbage and place in a large bowl.
  2. Add grated carrots, diced green pepper, and grated onion to the cabbage.
  3. In a separate bowl, combine mayonnaise, sugar, Dijon mustard, cider vinegar, celery seed, salt, and white pepper.
  4. Whisk dressing ingredients until smooth and well combined.
  5. Pour dressing over the vegetables and toss well to coat evenly.
  6. Cover and refrigerate for 3-4 hours before serving to allow flavors to meld.

Tips

For best results, make this coleslaw at least a few hours before serving to allow the flavors to develop. The sugar amount can be adjusted to your preference for sweetness. For a more colorful slaw, use a mixture of green and red cabbage. This coleslaw pairs perfectly with barbecue, fried chicken, or sandwiches, and keeps well in the refrigerator for several days.
