Couzan Billy's Red Beans + Rice

Ingredients

Scale: 1x
  • 1 pound Dried beans
  • 1 pound Andouille sausage
  • 1 cup Onion (chopped)
  • ½ cup Green onion (minced)
  • 1 tablespoon Garlic
  • 2 teaspoon Salt
  • 2 teaspoon Crab boil
  • 3 pound Ham hocks (smoked)

Instructions

  1. Soak beans overnight.
  2. Brown the sausage, onions, garlic and celery.
  3. Bring to boil and Simmer all day.
  4. During the last 30 minutes, mash some of the beans until desired thickness is reached.
  5. Spoon over rice to serve.
