Ingredients

Scale: 1x
  • 6 pound Pork butt
  • 2 tablespoon Kosher salt
  • 1 teaspoon Pepper
  • ½ teaspoon Cinnamon
  • ½ teaspoon Nutmeg
  • ½ teaspoon Allspice

Instructions

  1. Combine wine, cinnamon sticks, garlic and cloves. Boil this mixture for 5 minutes and let completely cool.
  2. Strain the solids from this mixture, reserving the liquid.
  3. Work that liquid into the meat.
  4. Let meat season in refrigerator for 2-3 days.
