Donuts-Baked Chocolate

  • 1⅓ cup Milk
  • 2 tablespoon Butter (softened)
  • 1 package Yeast
  • cup Flour (all-purpose, unbleached)
  • 1 cup Cocoa powder
  • 1 teaspoon Salt
  • cup Sugar
  • 2 large Egg (beaten)
  • 3 tablespoon Butter
  • 2 ounce Chocolate (unsweetened)
  • 2 cup Confectioner's sugar
  • ¼ cup Water

Instructions

  3. 4 1/2 cups Flour, all-purpose, unbleached
  4. GLAZE
  5. In a small saucepan over medium, heat milk and butter until butter is just melted. Set aside until cooled to between 95 degrees and 105 degrees.
  6. Once milk mixture has cooled, transfer to bowl of a stand mixer. Add yeast and let stand until bubbly, about 5 minutes.
  7. Meanwhile, sift together flour, cocoa powder and salt.
  8. When yeast and milk are ready, add flour mixture, sugar and eggs. Using mixer's dough-hook attachment, mix on low speed until dough comes together. Increase speed to medium and mix for 3 minutes.
  9. Transfer dough to a clean bowl, cover with a towel and let rise for 1 hour.
  10. Coat 2 baking sheets with cooking spray.
  11. Transfer dough to a lightly floured surface and roll out to 1/2 -inch thick. Use a 3-inch round cookie cutter to cut out circles, then use a 1-inch round cutter to remove center holes from each.
  12. Arrange rings and holes on prepared baking sheets. Cover loosely with a towel and let rise for 30 minutes.
  13. Heat oven to 350 degrees.
  14. Bake doughnuts about 20 minutes, or until they feel slightly firm to touch. The doughnuts will not change color. Transfer doughnuts to a wire rack to cool at least 15 minutes before glazing.
  15. To make glaze, in a small saucepan over low heat, melt butter and chocolate. Stir until fully melted, then remove from heat. Stir in powdered sugar and water. Let cool slightly, then dunk doughnuts into it.
  16. Makes 24 donuts and 24 donut holes.

Tips

Always preheat your oven and check for doneness a few minutes before the suggested baking time.
