Dutch Baby

- 3 tablespoon Oil
- 1 cup Flour
- ¼ cup Cornstarch
- 1 teaspoon Salt
- 2 teaspoon Lemon zest
- 2 tablespoon Lemon juice
- 3 large Egg
- 1¼ cup Milk
- 1 tablespoon Butter (melted)
- 1 teaspoon Vanilla extract
- 3 tablespoon Confectioner's sugar
Instructions
- Combine flour, cornstarch, salt and lemon zest in large bowl. In separate bowl, whip eggs until frothy, about 1 minute.
- Whisk in milk, butter, vanilla and 1 tablespoon oil.
- Whisk 1/3 milk mixture into flour until no lumps appear and then slowly add remaining milk mixture.
- Slowly add this mixture into skillet and bake for about 20 minutes.
- Transfer skillet to wire rack and top with lemon juice and powdered sugar.
- You can also add fresh whipped cream and fruit when serving.
Tips
Make sure all dairy ingredients are well-chilled for best results. Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
