Dutch Baby

Ingredients

  • 3 tablespoon Oil
  • 1 cup Flour
  • ¼ cup Cornstarch
  • 1 teaspoon Salt
  • 2 teaspoon Lemon zest
  • 2 tablespoon Lemon juice
  • 3 large Egg
  • cup Milk
  • 1 tablespoon Butter (melted)
  • 1 teaspoon Vanilla extract
  • 3 tablespoon Confectioner's sugar

Instructions

  1. Combine flour, cornstarch, salt and lemon zest in large bowl. In separate bowl, whip eggs until frothy, about 1 minute.
  2. Whisk in milk, butter, vanilla and 1 tablespoon oil.
  3. Whisk 1/3 milk mixture into flour until no lumps appear and then slowly add remaining milk mixture.
  4. Slowly add this mixture into skillet and bake for about 20 minutes.
  5. Transfer skillet to wire rack and top with lemon juice and powdered sugar.
  6. You can also add fresh whipped cream and fruit when serving.

Tips

Make sure all dairy ingredients are well-chilled for best results. Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
