Fire on the Prairie Dip

A simple, hot and cheesy bean dip with a kick from jalapenos. Perfect for game day!

Ingredients

  • 1 can (16 ounce) Refried beans
  • 1/4 cup Butter (1/2 stick)
  • 1/3 pound Cheddar cheese, shredded or cubed
  • 1 tablespoon Pickled jalapeno peppers, chopped
  • 2 teaspoons Pickled jalapeno juice (from the jar)
  • 1 medium Onion, minced
  • Corn chips, for serving

Instructions

  1. Combine the refried beans, butter, cheddar cheese, chopped jalapenos, jalapeno juice, and minced onion in the top pan of a double boiler (or a heatproof bowl set over a saucepan of simmering water).
  2. Heat the mixture over medium-low heat, stirring frequently, until the butter and cheese are completely melted and the dip is smooth and hot.
  3. Ensure the water in the bottom pan does not boil vigorously or touch the bottom of the top pan.
  4. Once heated through and smooth, transfer the dip to a serving bowl.
  5. Serve immediately with corn chips for dipping.

Tips

Using a double boiler prevents the cheese and beans from scorching. Adjust the amount of jalapeno and juice to your preferred spice level.
