Fire on the Prairie Dip

A simple, hot and cheesy bean dip with a kick from jalapenos. Perfect for game day!
Ingredients

- 1 can (16 ounce) Refried beans
- 1/4 cup Butter (1/2 stick)
- 1/3 pound Cheddar cheese, shredded or cubed
- 1 tablespoon Pickled jalapeno peppers, chopped
- 2 teaspoons Pickled jalapeno juice (from the jar)
- 1 medium Onion, minced
- Corn chips, for serving
Instructions
- Combine the refried beans, butter, cheddar cheese, chopped jalapenos, jalapeno juice, and minced onion in the top pan of a double boiler (or a heatproof bowl set over a saucepan of simmering water).
- Heat the mixture over medium-low heat, stirring frequently, until the butter and cheese are completely melted and the dip is smooth and hot.
- Ensure the water in the bottom pan does not boil vigorously or touch the bottom of the top pan.
- Once heated through and smooth, transfer the dip to a serving bowl.
- Serve immediately with corn chips for dipping.
Tips
Using a double boiler prevents the cheese and beans from scorching. Adjust the amount of jalapeno and juice to your preferred spice level.
