Frito Pie

Serves 8

Ingredients

Scale: 1x
  • 1 pound Ground beef
  • 1 small Onion (diced)
  • 2 clove Garlic
  • 1 tablespoon Chili powder
  • 1 cup Chicken stock
  • 4 ounce Green chilies (diced)
  • 15 ounce Cannellini Beans
  • cup Frito's
  • 2 cup Cheese (Monteray Jack)

Instructions

  1. Preheat oven to 350º
  2. Brown beef using your favorite Mexican seasoning.
  3. Remove from pan to a plate.
  4. In same pan, brown onion, chili powder and garlic for about 3-4 minutes.
  5. Add back beef and add chilies, broth and beans.
  6. Bring to boil and then simmer this for 30 minutes. Allow enough time for the mixture to thicken to the consistency of a thick chili.
  7. In a 1 1/2 quart casserole, place half the Frito's in the bottom. Top with the chili mixture and then the remaining Frito's.
  8. Finally, top with cheese and place in oven for about 15-20 minutes.
  9. Serve with sour cream, avocado or salsa.

Tips

Make sure all dairy ingredients are well-chilled for best results.
