Frito Pie

Ingredients

- 1 pound Ground beef
- 1 small Onion (diced)
- 2 clove Garlic
- 1 tablespoon Chili powder
- 1 cup Chicken stock
- 4 ounce Green chilies (diced)
- 15 ounce Cannellini Beans
- 2½ cup Frito's
- 2 cup Cheese (Monteray Jack)
Instructions
- Preheat oven to 350º
- Brown beef using your favorite Mexican seasoning.
- Remove from pan to a plate.
- In same pan, brown onion, chili powder and garlic for about 3-4 minutes.
- Add back beef and add chilies, broth and beans.
- Bring to boil and then simmer this for 30 minutes. Allow enough time for the mixture to thicken to the consistency of a thick chili.
- In a 1 1/2 quart casserole, place half the Frito's in the bottom. Top with the chili mixture and then the remaining Frito's.
- Finally, top with cheese and place in oven for about 15-20 minutes.
- Serve with sour cream, avocado or salsa.
Tips
Make sure all dairy ingredients are well-chilled for best results.
