A copycat recipe for the classic Kansas City BBQ sauce from Gates Bar-B-Q, known for its balance of sweet, tangy, and spicy flavors.

Ingredients

Scale: 1x
  • 1 cup Sugar
  • 0.25 cup Salt
  • 2 tablespoons Celery seed
  • 2 tablespoons Cumin powder
  • 2 tablespoons Cayenne pepper
  • 2 tablespoons Garlic powder
  • 1 tablespoon Chili powder
  • 2 quarts Ketchup ((8 cups))
  • 2 cups Cider vinegar
  • 1.5 teaspoons Liquid Smoke
  • 1 teaspoon Lemon juice

Instructions

  1. In a bowl, mix together all the spices: sugar, salt, celery seed, cumin powder, cayenne pepper, garlic powder, and chili powder.
  2. In a separate large bowl or container, combine the wet ingredients: ketchup, cider vinegar, liquid smoke, and lemon juice.
  3. Add the spice mixture to the wet ingredients.
  4. Mix very well until all the spices are thoroughly incorporated and the sugar and salt have dissolved.
  5. Serve warm or cold. The sauce can also be frozen for later use.

Tips

This recipe makes a very large batch, suitable for parties or for freezing. Adjust cayenne pepper for desired heat level. Since it's no-cook, ensure sugar and salt are fully dissolved for best texture.
