Green Pork Chili

A flavorful Southwestern-style green chili with smoked pork, roasted green chilies, and beer
Ingredients

- 1 pound Smoked pork , chopped
- 1 medium Onion , minced
- 3 cloves Garlic , chopped
- 1 tablespoon Olive oil
- 2 pounds Roasted green chilies , chopped
- 2 tablespoons Jalapeno pepper (adjust to taste)
- 1 teaspoon Cumin
- 1 pinch Salt
- 1 pinch Black pepper
- 3 cups Chicken stock
- 1 bottle Dark beer
Instructions
- In a large Dutch oven or heavy pot, heat olive oil over medium heat
- Add garlic and onion and sauté until softened, about 3-4 minutes
- Add chopped smoked pork and cook until heated through
- Add remaining ingredients (green chilies, jalapenos, cumin, salt, pepper, chicken stock, and beer)
- Bring the mixture to a boil
- Reduce heat to low and simmer, partially covered, for 2-3 hours
- Stir occasionally and adjust seasoning if needed
- If you want more heat, add more jalapenos
- Serve hot with your favorite toppings such as shredded cheese, sour cream, or tortilla chips
Tips
Hatch green chilies work best for this recipe if you can find them. To roast your own green chilies, place them under a broiler until the skin is blackened, then place in a paper bag to steam for 10 minutes before peeling and removing seeds.
