Heirloom Key Lime Pie

Ingredients

  • 5 large Egg
  • ¾ cup Sugar
  • cup Key lime juice
  • 1 tablespoon Butter
  • ¼ cup Sugar

Instructions

  1. 1 baked Pie shell(s), 9
  2. 10-12 Key Limes, juiced will equal 1/3 cup.
  3. This is excellent with a graham cracker crust.
  4. Separate eggs into 3 bowls as follows.....5 yolks in one bowl, 2 whites in one bowl and 3 whites in last bowl.
  5. Cream egg yolks, add 3/4 cup sugar and lime juice and mix thoroughly.
  6. Cook over low heat until thick. Add butter and remove from heat.
  7. Let cool slightly.
  8. Beat the 2 egg whites until stiff, then fold in cooled lime mixture.
  9. Fill pie shell with this mixture.
  10. Beat remaining 3 egg whites until stiff. Beat in 1/4 cup sugar.
  11. Pile meringue on top of pie and bake at 325° for 15 minutes.

Tips

Make sure all dairy ingredients are well-chilled for best results. Ensure your bowl and beaters are completely free of any grease for the best meringue. Press the graham cracker crust firmly into the pan for better stability. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
