High Fat Scalloped Potatoes

- 3 pound Potato (sliced)
- 1½ cup Heavy cream
- 2 tablespoon Butter
- ¼ cup Shallot (minced)
- 1 teaspoon Rosemary (dried)
- ½ cup Cream cheese
- ½ cup Milk
- ½ teaspoon Paprika
- ¾ cup Parmesan (fresh, grated)
Instructions
- Preheat oven to 350º and oil bottom of 2 qt. baking dish.
- Place sliced potatoes in mixing bowl and add 3/4 cup of the heavy cream. Toss to mix and set aside.
- Melt butter in skillet and saute shallots and garlic. Do not brown.
- Add bay leafs and rosemary to skillet. Whisk in cream cheese, milk and remaining heavy cream.
- Simmer, whisking constantly for 4 minutes or until smooth.
- Add paprika and salt and pepper. Discard the bay leafs and pour over the potatoes and cream mixture.
- Toss to coat and then arrange in baking dish.
- Top with parmesan cheese and bake until tender.
Tips
Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
