Italian Porketta Sandwiches

Ingredients

Scale: 1x
  • 4 teaspoon Red pepper (crushed)
  • 4 teaspoon Garlic powder
  • 6 teaspoon Salt
  • 2 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Thyme (dried)
  • 6 large Bay leaf

Instructions

  1. Grind and combine all spices except bay leaves.
  2. Coat roast with Olive oil.
  3. Rub spices in and wrap in plastic wrap.
  4. Marinate in refrigerator for 1-2 days. 2 days is best.
  5. Place in roasting pan with NO additional liquid. Add 3 bay leafs on top of roast.
  6. Cook at low heat until internal meat temp reaches 200º. At 225º it will take 2 hours/pound.
  7. Pull apart and serve on crusty rolls.
