Kevi's \"Hold Your Heart\" Pea Soup

Ingredients

Scale: 1x
  • 2 cup Onion (chopped)
  • 1 cup Carrot (chopped)
  • 2 cup Celery (chopped)
  • 2 tablespoon Butter
  • cup Green peas (dried)
  • 12 whole black peppercorns
  • 2 tablespoon Fines herbes
  • 6 cup Chicken stock
  • 1 cup Evaporated milk

Instructions

  1. Brown ham bones and veggies in butter.
  2. Slightly crush the peppercorns and add along with peas, herbs and stock.
  3. Cover, bring to boil and simmer for 3 hours.
  4. Remove ham bones, dice meat and set aside.
  5. Force through food mill or sieve.
  6. Reheat with reserved meat and evaporated milk, thin with additional stock if desired.
  7. Salt and pepper to taste and then add some sherry just prior to serving.
