A spot-on copycat of KFC's famous coleslaw with finely chopped cabbage and carrots in a sweet, tangy dressing. Perfect alongside fried chicken or as a refreshing side dish.

  • 8 cups cabbage, finely shredded or chopped
  • 1 large carrot, grated
  • 2 tablespoons onion, minced
  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup milk
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons white vinegar

Instructions

  1. Ensure cabbage and carrots are chopped into very fine pieces (about the size of rice) for authentic KFC texture.
  2. In a large bowl, combine sugar, salt, pepper, milk, mayonnaise, buttermilk, lemon juice, and white vinegar.
  3. Beat the dressing ingredients until smooth and well combined.
  4. Add the finely chopped cabbage, grated carrots, and minced onion to the dressing.
  5. Mix well until all vegetables are evenly coated with the dressing.
  6. Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.
  7. For best results, stir occasionally during chilling time.

Tips

The secret to authentic KFC coleslaw is chopping the vegetables very finely - use a food processor with a fine shredding disk for best results. The coleslaw actually tastes better the next day, so consider making it a day ahead. If you don't have buttermilk, you can substitute regular milk with a splash of vinegar or lemon juice.
