- 1 large carrot, grated
- 2 tablespoons onion, minced
- 1/3 cup granulated sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup milk
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons white vinegar
Instructions
- Ensure cabbage and carrots are chopped into very fine pieces (about the size of rice) for authentic KFC texture.
- In a large bowl, combine sugar, salt, pepper, milk, mayonnaise, buttermilk, lemon juice, and white vinegar.
- Beat the dressing ingredients until smooth and well combined.
- Add the finely chopped cabbage, grated carrots, and minced onion to the dressing.
- Mix well until all vegetables are evenly coated with the dressing.
- Cover and refrigerate for at least 2 hours before serving to allow flavors to meld.
- For best results, stir occasionally during chilling time.
Tips
The secret to authentic KFC coleslaw is chopping the vegetables very finely - use a food processor with a fine shredding disk for best results. The coleslaw actually tastes better the next day, so consider making it a day ahead. If you don't have buttermilk, you can substitute regular milk with a splash of vinegar or lemon juice.
