Nona's Beef and Rice Risotto

Ingredients

Scale: 1x
  • 1 pound Beef (fresh or leftover)
  • 6 cup Chicken stock
  • 6 ounce Tomato paste
  • 1 cup Rice (uncooked)
  • 2 tablespoon Olive oil
  • 1 tablespoon Parsley (dried)
  • 1 tablespoon Oregano (dried)
  • 1 teaspoon Rosemary (dried and crushed)
  • 1 teaspoon Basil (dried)

Instructions

  1. Cover and simmer for 2 hours. Add the rice. Cover and simmer for another 30 minutes.
  2. Cook this until it reaches your desired consistency. You can add more chicken stock if you desire a thinner soup-like consistency.
