Nona's Beef and Rice Risotto

- 1 pound Beef (fresh or leftover)
- 6 cup Chicken stock
- 6 ounce Tomato paste
- 1 cup Rice (uncooked)
- 2 tablespoon Olive oil
- 1 tablespoon Parsley (dried)
- 1 tablespoon Oregano (dried)
- 1 teaspoon Rosemary (dried and crushed)
- 1 teaspoon Basil (dried)
Instructions
- Cover and simmer for 2 hours. Add the rice. Cover and simmer for another 30 minutes.
- Cook this until it reaches your desired consistency. You can add more chicken stock if you desire a thinner soup-like consistency.
