Peach Kuchen

Ingredients

Scale: 1x
  • ½ cup Butter
  • 2 cup Flour
  • ¼ teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Sugar
  • 1 teaspoon Cinnamon
  • 1 cup Heavy whipping cream

Instructions

  1. Combine flour, baking powder, salt and 2 TBLS of sugar. Work in butter until cornmeal consistency.
  2. Pat an even layer of above mixture into bottom and up sides of pan. Use your hands and press firmly until pastry holds.
  3. Remove peach skin and slice. Arrange these on top of pastry.
  4. Combine cinnamon and remaining sugar and sprinkle over fruit.
  5. Bake for 15 minutes and then remove from oven.
  6. Combine cream and egg yolks and pour over top.
  7. Bake another 30 minutes or until set. This must be refrigerated and cooled. You can then serve cold or re-heat slightly and serve.

Tips

Make sure all dairy ingredients are well-chilled for best results. Use fresh, ripe fruit for the best flavor. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
