Peanut Butter Drizzles

- 2 cup Flour
- 2 cup Oats (quick-cooking)
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 2 stick Butter (softened)
- 1 cup Sugar (granulated)
- 1 cup Brown sugar (light)
- 2 large Egg
- ⅔ cup Peanut butter (creamy)
- 1 teaspoon Vanilla
- 12 ounce Chocolate (semi-sweet)
- 1 cup Confectioner's sugar
- ½ cup Peanut butter (creamy)
- ¼ cup Whipping cream or milk
Instructions
- Beat together butter and both sugars on medium speed until fluffy.
- Add eggs, peanut butter and vanilla until smooth.
- Stir in flour mixture 1 cup at a time.
- Press dough into a 15" x 10" jelly roll pan and bake until firm, about 20-25 minutes.
- Meanwhile, stir together confectioners sugar, peanut butter and cream.
- Remove cookie base from oven and sprinkle with chocolate chips spreading as they melt.
- Drizzle the sugar/peanut butter mixture on top of this.
- Let cool and then cut into 1 1/2" x 1" bars.
Tips
Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
