Peanut Butter Jumbos

- 1½ cup Flour (all-purpose, unbleached)
- 1 teaspoon Baking soda
- ¾ teaspoon Salt
- 1¼ cup Peanut butter (creamy)
- ¾ cup Brown sugar (light)
- 1 stick Butter
- ½ cup Corn syrup (light)
- ¼ cup Sugar
- 1 large Egg
- 1 large Egg yolk
- 1 teaspoon Vanilla
Instructions
- Melt and slightly cool the butter. Whisk peanut butter, both sugars, corn syrup, butter, vanilla, egg and egg yolk in larger bowl. Fold in the flour mixture until just combined.
- Separate into 2 large rolls, wrap in plastic wrap and let chill for at least 1 hour. DO NOT SKIP THIS COOLING!!
- Pre-heat oven to 350º. Roll dough into 1/4-cup portions and place on greased cookie sheet at least 2" apart. Cross hatch with fork into 3/4" thick disks.
- Bake for 12-14 minutes.
- This will yield about 15 cookies that are 4-6" wide.
Tips
Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
