Peanut Butter Jumbos

Ingredients

Scale: 1x
  • cup Flour (all-purpose, unbleached)
  • 1 teaspoon Baking soda
  • ¾ teaspoon Salt
  • cup Peanut butter (creamy)
  • ¾ cup Brown sugar (light)
  • 1 stick Butter
  • ½ cup Corn syrup (light)
  • ¼ cup Sugar
  • 1 large Egg
  • 1 large Egg yolk
  • 1 teaspoon Vanilla

Instructions

  1. Melt and slightly cool the butter. Whisk peanut butter, both sugars, corn syrup, butter, vanilla, egg and egg yolk in larger bowl. Fold in the flour mixture until just combined.
  2. Separate into 2 large rolls, wrap in plastic wrap and let chill for at least 1 hour. DO NOT SKIP THIS COOLING!!
  3. Pre-heat oven to 350º. Roll dough into 1/4-cup portions and place on greased cookie sheet at least 2" apart. Cross hatch with fork into 3/4" thick disks.
  4. Bake for 12-14 minutes.
  5. This will yield about 15 cookies that are 4-6" wide.

Tips

Make sure all dairy ingredients are well-chilled for best results. Always preheat your oven and check for doneness a few minutes before the suggested baking time.
