Pineapple and Papya Salsa

Ingredients

  • 4 cup Black beans (cooked and drained)
  • 2 cup Pineapple (diced)
  • 2 cup Papaya (diced)
  • 1 cup Red onion (diced)
  • 1 cup Poblano pepper (diced)
  • 1 cup Olive oil
  • ½ cup White wine vinegar
  • ¼ cup Mint (fresh, chopped)
  • ¼ cup Sugar

Instructions

  1. Combine all and refrigerate for 2 hours.
  2. Serve with tortilla chips or even better, grilled fish.

Tips

Use fresh, ripe fruit for the best flavor.
