Pineapple and Papya Salsa

Ingredients

- 4 cup Black beans (cooked and drained)
- 2 cup Pineapple (diced)
- 2 cup Papaya (diced)
- 1 cup Red onion (diced)
- 1 cup Poblano pepper (diced)
- 1 cup Olive oil
- ½ cup White wine vinegar
- ¼ cup Mint (fresh, chopped)
- ¼ cup Sugar
Instructions
- Combine all and refrigerate for 2 hours.
- Serve with tortilla chips or even better, grilled fish.
Tips
Use fresh, ripe fruit for the best flavor.
