A rich pork stew with beer, coffee, and vegetables - perfect for game day

- 1-2 pounds pork, cut into bite-sized chunks
- 1 large onion, diced
- 3 cloves garlic, crushed
- 1/3 cup flour
- 1 teaspoon allspice
- 1/2 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1 bottle beer
- 2 cups beef stock
- 3 tablespoons cider vinegar
- 3 tablespoons red wine
- 1/2 cup coffee
- 2 carrots, chopped
- 4 large red potatoes
- 1 bell pepper
- 2 tablespoons oil for browning
- Salt to taste
Instructions
- Use a large pot like a Dutch oven
- Cube the pork into bite-sized chunks
- Heat the oil in the pot and brown the pork
- Add the onions and garlic and cook for about 5 minutes
- Add the flour, allspice, and both white and black peppers
- Cook for about 2 minutes, ensuring all the flour is absorbed
- Add all the liquids (beer, beef stock, cider vinegar, red wine, and coffee)
- Bring to a boil, making sure to scrape the bits from the bottom of the pan
- Let simmer for about 30 minutes
- Meanwhile, cube the potatoes and bell pepper, and cut carrots into 1/2-inch thick coins
- Add the vegetables to the stew
- Bring to a boil again, then reduce to a simmer for about an hour
- Taste and adjust seasonings, adding salt as needed
