Porky Football Stew

Serves 8

Ingredients

Scale: 1x
  • 1 large Onion (diced)
  • 3 clove Garlic (crushed)
  • cup Flour
  • 1 teaspoon Allspice
  • ½ teaspoon Black pepper
  • ½ teaspoon White pepper
  • 1 bottle Beer
  • 2 cup Beef stock
  • 3 tablespoon Cider vinegar
  • 3 tablespoon Wine (red)
  • ½ cup Coffee
  • 4 large Potato (red)

Instructions

  1. Add the onions and the garlic and cook for about 5 minutes.
  2. Add the flour, allspice and both white and black peppers and cook for about 2 minutes making sure all the flour is absorbed.
  3. Add all the liquids and bring to boil making sure to scrape the bits from the bottom of the pan. Let this simmer for about 30 minutes.
  4. Cube the taters and the bell pepper. Cut carrots into coins about 1/2" thick.
  5. Add the veggies, bring to boil and simmer for a good hour.
  6. Taste and adjust for seasonings...you will need to add some salt.
