Ingredients

  • 1-2 pounds Pork
  • 1 large Onion , diced
  • 3 cloves Garlic , crushed
  • 0.33 cup Flour
  • 1 teaspoon Allspice
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon White pepper
  • 1 bottle Beer
  • 2 cups Beef stock
  • 3 tablespoons Cider vinegar
  • 3 tablespoons Red wine
  • 0.5 cup Coffee
  • 2 Carrots , chopped
  • 4 large Red potatoes
  • 1 Bell pepper
  • 2 tablespoons Oil (for browning)
  • Salt (to taste)

Instructions

  1. Use a large pot like a Dutch oven
  2. Cube the pork into bite-sized chunks
  3. Heat the oil in the pot and brown the pork
  4. Add the onions and garlic and cook for about 5 minutes
  5. Add the flour, allspice, and both white and black peppers
  6. Cook for about 2 minutes, ensuring all the flour is absorbed
  7. Add all the liquids (beer, beef stock, cider vinegar, red wine, and coffee)
  8. Bring to a boil, making sure to scrape the bits from the bottom of the pan
  9. Let simmer for about 30 minutes
  10. Meanwhile, cube the potatoes and bell pepper, and cut carrots into 1/2-inch thick coins
  11. Add the vegetables to the stew
  12. Bring to a boil again, then reduce to a simmer for about an hour
  13. Taste and adjust seasonings, adding salt as needed

This stew is perfect for game day gatherings. Any type of pork works well in this recipe - shoulder, loin, or even leftover pork roast. The flavor deepens if made a day ahead.
