Pot Roast New England Style

Serves 8

Ingredients

Scale: 1x
  • 3 pound Chuck roast
  • 2 medium Onion
  • 5 cup Water
  • 1 teaspoon Vinegar

Instructions

  1. Season roast with your favorite beef rub, or, simply some salt and pepper.
  2. Cut the veggies into quarters and place into bottom of slow cooker.
  3. Place roast on top of veggies and add water, vinegar and bay leaf.
  4. Cook on low for 5-9 hours.
  5. Remove roast onto platter and keep warm, reserving the broth and veggies.
  6. Turn cooker to high and add cabbage. Cook until cabbage becomes tender.
  7. Use 1 1/2 cups of strained broth to use in making gravy....see recipe for Pot Roast Gravy.
  8. Reserve the veggies and serve with roast and gravy over mashed potatoes.
