Pot Roast New England Style

Ingredients

- 3 pound Chuck roast
- 2 medium Onion
- 5 cup Water
- 1 teaspoon Vinegar
Instructions
- Season roast with your favorite beef rub, or, simply some salt and pepper.
- Cut the veggies into quarters and place into bottom of slow cooker.
- Place roast on top of veggies and add water, vinegar and bay leaf.
- Cook on low for 5-9 hours.
- Remove roast onto platter and keep warm, reserving the broth and veggies.
- Turn cooker to high and add cabbage. Cook until cabbage becomes tender.
- Use 1 1/2 cups of strained broth to use in making gravy....see recipe for Pot Roast Gravy.
- Reserve the veggies and serve with roast and gravy over mashed potatoes.
