Potato Cheese Soup

- 3 cup Potato (cubed)
- ½ cup Celery (diced)
- ½ cup Onion (diced)
- 8 ounce Sour cream
- 2 tablespoon Flour
- ½ cup Milk
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 8 ounce Velveeta cheese
Instructions
- In large saucepan, combine the potatoes, celery and onion.
- Add enough chicken stock to just barely cover. Simmer for 15-20 minutes until potatoes are tender.
- Whisk together sour cream, flour and milk. Add to soup slowly and heat on low until thickened.
- Add salt, pepper and cheese. Heat until melted.
Tips
Make sure all dairy ingredients are well-chilled for best results.
