Potato Cheese Soup

Ingredients

  • 3 cup Potato (cubed)
  • ½ cup Celery (diced)
  • ½ cup Onion (diced)
  • 8 ounce Sour cream
  • 2 tablespoon Flour
  • ½ cup Milk
  • 1 teaspoon Salt
  • ½ teaspoon Pepper
  • 8 ounce Velveeta cheese

Instructions

  1. In large saucepan, combine the potatoes, celery and onion.
  2. Add enough chicken stock to just barely cover. Simmer for 15-20 minutes until potatoes are tender.
  3. Whisk together sour cream, flour and milk. Add to soup slowly and heat on low until thickened.
  4. Add salt, pepper and cheese. Heat until melted.

Tips

Make sure all dairy ingredients are well-chilled for best results.
