Potato Pancakes

- 2 pound Potato
- ¼ cup Flour
- ¼ cup Onion
- 1 teaspoon Salt
- ½ teaspoon Pepper
Instructions
- 2 Egg(s), beaten
- Shred potatoes and grate the onion.
- In large bowl combine the eggs, flour, onion, salt and pepper.
- Add potatoes.
- In large skillet, heat some oil for frying.
- Spoon the potato mixture into hot oil and flatten with back of spoon.
- Fry each side until golden brown.
