Potato Soup

Serves 8

Ingredients

Scale: 1x
  • ½ stick Butter
  • 5 medium Potato (cubed)
  • 1 large Onion (diced)
  • ¼ teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon White pepper
  • 4 cup Chicken stock
  • slice carrots into thick coins.

Instructions

  1. Add chicken stock making sure to scrape up any bits on the bottom of the pan.
  2. Bring to boil and cook for 10-15 minutes, until potato and carrot is tender.
  3. Remove 1/2 the solids by using a slotted spoon and place into blender.
  4. Add 1 cup of chicken stock and puree.
  5. Add this back to the pot and heat and serve.
