Poultry Honey Brine

Ingredients

Scale: 1x
  • ½ cup Kosher salt
  • 1 cup Honey
  • 2 tablespoon Tender Quick
  • ¼ teaspoon Cloves
  • ½ teaspoon Pickling spice
  • ½ cup Molasses

Instructions

  1. Let settle back to room temp. Add honey and molasses and stir in well.
  2. If injecting, inject in breasts, thighs and legs...about 2 oz. in each. Let sit refrigerated for 24 hours.
  3. If soaking, submerge entire bird in brine for 48 hours under refrigeration.
